Panko Chicken & Broccoli Casserole

Filling1 1/2 - 2 C Chicken Breast12 oz Broccoli (steamed)1 C White Rice (measure dry)Roux (for Filling)1 1/2 C shredded Cheddar Cheese3/4 C Butter1/2 C FlourTopping:1 C Panko Bread Crumbs (unseasoned)1/4 C Butter
Makes 4 large or 6 normal/medium servings.
Individual Preparations:
Chunk and cook chicken as desired.
Steam broccolli, let drain and chop.
Heat 3/4 C butter, flour and cheese into a roux. (google)
Cook 1 cup (dry) of white rice.
Mix cheese mixture, rice, chopped broccoli and chicken together, press into a square pyrex or casserole pan. Bake 20 minutes at 375*.
Melt 1/4 C butter and mix into breadcrumbs. Sprinkle over casserole and bake another 15-20 minutes.
Let sit for 15-30 minutes to let cheese settle and reaffirm normal tastes and textures expected. Serve hot!
