Easy Bran Muffins

Ingredients
dry ingredients:3 cups bran flakes cereal (crushed finely)2 cups whole wheat pastry flour1.25 tsp baking soda1/2 tsp saltWet ingredients:1/2 cup maple syrup5 tsp packed brown sugar1 egg2 cups 1% milk with 2tbsp vinegar (or can use low-fat buttermilk)
Directions
preheat oven to 350 degrees
1. combine 1% milk and vinegar and set aside
2. combine all dry ingredients (crush bran flakes first)
3. combine all wet ingredients including the milk mixture
4. combine wet ingredients into dry
5. use non-stick cooking spray to grease 12 inch muffin pan
6. fill muffin pan and bake for 20 minutes or until inserted toothpick comes out clean

Makes 12 servings, 1 muffin = 1 serving
