Pumpkin Bread

Ingredients
1/4 C. oil3/4 C. unsweetened applesauce2 C. sugar3 C. flour2 tsp. pumpkin pie spice2 tsp. cinnamon1 tsp. Allspice1 1/2 Tbs. baking soda1 1/2 Tbs. baking powder2 C. fresh mashed pumpkin or canned.3 eggs
Directions
Blend together oil, applesauce, sugar, and eggs. Add pumpkin. Mix in all other ingredients. Pour into 2 pans sprayed with Pam. Bake for 1 hour at 350 degrees F. or until toothpick inserted in middle comes out clean.

    Made this bread this morning. It was moist and the texture was great. I did use just one cup of sugar and one cup of splenda. It did not affect the texture of the bread. Is is great! Thanks! - 11/4/12

    Texture, moisture great. Egg beaters should work fine, Sherle. I used 1 egg & Wilton's Meringue Powder + 4 T water to make two egg whites. I also used half white flour and half Hodgson Mill WW graham flour and all brown sugar. A little too spicey for my taste. Will adjust the spices next time.
