Barley, Lentil and Kale Soup

Ingredients
1 Tbsp. olive oil1 Cup chopped onion1 Cup sliced carrot3 cloves garlic10 Cups chicken broth/stock1 Tbsp. cumin2/3 Cup barley1 14 oz. can chopped tomatoes2/3 Cup lentils4 Cups Chard, chopped
Directions
Saute onion and carrot in olive oil until carrots are tender. Add garlic and saute 30 second. Add cumin and stir 30 seconds. Add chicken broth and barley. Bring to boil, then simmer about 30 minutes. Add tomatoes and lentils, continue simmering about 30 minutes, or until lentils are tender. Add chard and cook until tender, about 5 minutes.
