Low Fat Pesto

Ingredients
2 cups of lightly packed fresh basil leaves1-2 cloves garlic1/2 C grated Parmesan cheese2 T lemon juice2 T olive oilSalt & pepper to taste
Directions
In food processor blender, combine basil, garlic and Parmesan. With machine running, add lemon juice and olive oil until well blended. Season with salt & pepper.

Makes about 1 C of pesto.

I use 1/3 C of this pesto on my Tomato and Corn Pizza.
