Mexican Meatballs

Ingredients
  • 1 1/2 lb. lean ground beef
  • 1 package taco seasoning mix
  • 1 green onion, finely diced
  • 2 eggs, beaten
  • 1 minced clove garlic
  • 1 block sharp cheddar cheese, cut into small cubes
Directions
1. Preheat the oven to 425° F.



2. Mix all ingredients except cheese together in a bowl.



3. Mold the meat by tablespoonfuls around a cube of cheese to form a meatball. Place meatballs on a jelly roll pan sprayed with PAM and bake for 7 - 10 minutes or until meat is done and cheese has melted.

    you forgot to put the number of servings into the window so it's giving the nutritional information for the entire recipe as if it is per serving. You might drop the sodium number some if you make your own taco seasoning. - 3/20/07
