Oatmeal On-the-Go Bars

Ingredients
2 Cups Old Fashioned Oats1 Cup Oat Flour (make your own by grinding oats in coffee grinder)1 1/2 Tsp CinnamonPinch of Salt1 Tsp Baking Powder1 1/2 Cup Almond Milk3 Tbsp Agave or Honey1/2 Cup Applesauce1 Large Egg1 Tsp Vanilla Extract3/4 Cup Cranberries, Raisins, Blueberries, and/or Cherries1/2 Cup Walnuts
Directions
1. Preheat oven to 375 degrees.
2. Mix dry ingredients.
3. Mix wet ingredients.
4. Pour dry into wet and stir to combine.
5. Pour into a 7 x 11 inch baking dish either buttered or greased or lined with parchment.
6. Bake for 30 minutes or until thickened and golden.
7. Cool and cut into 18 squares.

Refrigerating the bars will make them last up to 5 days.

You can double the recipe and bake in a 9 x 13 inch baking dish, making each bar 2 servings.

    These could easily be made vegan by replacing the egg with egg replacer (Like Ener-G brand.) Not to mention cutting out all the cholesterol! - 7/13/10

    I fixed the ingredients list. I've made these bars with both honey and agave and both sweeteners work well.
