  • Number of Servings: 1
Ingredients
1 Tbsp chia seeds1 medium banana.5 cup of fresh diced pineapple.25 cup of water
Directions
In a blender ( I have even used my Magic Bullet for this) blend banana and water.

Pour blended mixture into a dessert container or bowl. Add chopped pineapple.

Stir in 1 Tbsp of chia seeds. Mix very well.

Pop into refrigerator to set up. The longer you let it set up the better it tastes. I generally let it refrigerate over night.

I added coconut milk instead of water and some walnuts to your recipe. It was awesome. - 9/17/10

OMG that was so good and so filling too. I have made your recipe a couple of times and then once I switched out and used mango. It was heavenly. I have been making it daily, - 9/5/10

I used chia meal instead of chia seeds, so I don't know if that changes the consistency, but it tasted great! - 2/2/11

Why are the coconut chunks shown in the picture? Is it used in the recipe and not in the list of ingredients by mistake? Why is it blue? I do want to try this just to see if it comes out blue. - 2/25/13

What makes it blue, and it looks like you may have added coconut? - 2/12/13

For those wondering about the photograph:

It is a photo of tapioca pearls and blue litchi jelly (or blue jello). Here's the original http://www.123rf.co.kr/photo_9997205_.html - 6/3/14

I added juice from 1/2 a lemon and only 1/8th cup water which kept the banana from turning brown. Awesome recipe I find it hard to wait 24 hrs to eat it. Filling and satisfies my sweet tooth! - 7/13/13

Everyone, the blue is just the bottom of the glasses. I assume the coconut is just a garnish to make a prettier picture, which was probably a decision not even made by the person who posted the recipe. - 6/18/13

This recipe is both delicious and healthy! The glass is blue, not the pudding, and it appears that the rim of the glass was dipped in coconut flakes, which can be found at one of my favorite sites, www.vivapura.com - 3/26/13

This is very good. Light and fruity. I will definitely make it again and probably play around with different fruits to add in. I feel that the picture is misleading though. There is no coconut in this recipe and mine didn't look anything like that. - 3/7/13

This is great pudding! Mine came out brown though. How did you get it so white? Are there white chia seeds? - 2/28/13

Hmmm maybe try coconut milk instead of banana to make it lower carb? - 8/8/18
