The Best Broccoli Cheddar Soup

Ingredients

1 cup diced onion1 clove garlic, minced1/2 cup chopped celery3 cups chicken broth2 bunches broccoli 2 medium peeled, cubed potatoes1 cup 1% milk1 cup shredded low fat cheddar cheese1/2 tsp ground thyme1/2 tsp ground black pepper1/2 tsp Worcestershire sauce
Saute onions, garlic and celery in olive oil until soft.
Add 1 1/2 to 2c chicken broth; bring to a boil.
Add cubed potatoes and broccoli florets. Cover, reduce heat and simmer until potatoes are soft.
Use immersion blender to puree
Stir in milk. If soup seems thick, add more chicken broth to reach desired cosistency. (You can also add more milk for more creaminess if desired--which will change the nutrional info a bit)
Stir in shredded cheese until melted and season with spices and Worchestershire sauce.
Makes approximately 8 cups

Try using less chicken stock at first and add more if needed. Mine is always thick and creamy.
