OSG Red Quinoa & Black Bean Vegetable Salad

Ingredients
Salad:1 C. Red quinoa1 can black beans, drained and rinsed1 red pepper, chopped1/4 C fresh cilantro, finely chopped2 green onions, chopped1 can whole kernal corn1 sm. avocado, chopped into 1" piecesDressing:4-5 T fresh lime juice (2 sm limes)1/2 t kosher salt, or to taste1/2 t ground black pepper1 garlic clove, minced1/4 C fresh cilantro, finely chopped1/4 C extra virgin olive oil1/2 t ground cumin
Directions
Yields 5 1-cup servings
Cook quinoa according to package
prepare the chopped vegetables
Allow quinoa to cool for 5 min. then fluff with fork. Add beans and vegetables and toss well.
Prepare dressing and drizzle over salad.
Serve and room temperature
