Pork tagine with prunes and cousous

Ingredients
Pork fillet, about 600 grams150 grams raw onions2 raw garlic cloves2 tablespoons olive oil150 grams raw baby carrots1 tin chickpeas150 grams dried prunes1 tablespoon honey100 grams fresh lemon zestsalt and pepper to tasteginger and cumin, about 1/4 teaspoon each100 grams cooked couscous per person
Directions
Heat up a pan and add the onions, then quickly 1 tblespoon of olive oil.
Add the chopped garlic. Let it fry till soft and add honey to help caramelize.
Remove from pan, cube meat and scorch with another tbsp of olive oil in the same pan.
When done, remove from pan and add a cup of water to make a broth.
Flavour meat with salt, pepper, ginger and cumin.
Transfer to tagine and add carrots, prunes, chickpeas and broth. (And a little more water if needed, depending on the size of your tagine.)
Cover and cook in a slow oven for around 1 to 1.2 hours.
Serve with steaming couscous for a hearty meal!!
