Salmon Patties

Ingredients
1 can of pink salmon 1 egg20 crackers crushedlemon pepper
Directions
makes 8 (2") patties

dump 1 can of salmon into a large mixing bowl, clean out bones and dark skin if desired

add one egg and lemon pepper (light or heavy) and stir to mix

add 20 crushed crackers (fat free and salt free preferred)

mix well, let stand for 5 min

pre-heat skillet with Pam spray olive oil

stir salmon mixture and make patties
(I use an ice cream scoop to create even sized portions)

cook patties about 5-6 min per side or until dark golden brown
