Paleo Coconut Chocolate Bars

Ingredients
4 Tbsp. Coconut Oil1/4 C. Unsweetened Cocoa powder1/2 C. Ground Nuts (Walnuts, Pecans or Almonds)3/4 C. Shredded Coconut (unsweetened)1 Tbsp. Honey
Directions
Mix all the dry ingredients together, blend in coconut oil and honey and combine until mixed well.
Press into a cold 9x9 baking pan and chill for 30 minutes before cutting into 12 pieces.

    I made these last night. My kids even loved them! I did not have honey so I used a little more coconut oil (less than a tablespoon) and 4 packets of stevia. - 2/14/13

    Taste is very good - especially if you are on an elimination diet. Have made something similar as a "drop cookie" Next time I plan to use a smaller pan so the bars will be a little thicker - 9x9 makes them too hard to handle. - 5/30/13

    I used sweetened coconut because that's what I had. They aren't very sweet, true, but when I do the sugar "detox", I am sure they will be just perfect! My DIL likes them a lot, as do I. One really IS enough to satisfy my chocolate craving. - 6/14/13
