Ingredients
3 Med - Large Potatoes (162 cal each (486 cal total)2 Larges Eggs, hard Boiled (70 cal each (140 cal total)1 Cup of non-fat plain Greek Yogurt (120 cal total)3/4 Cup of Hellmanns/Best Foods Low Fat Mayonnaise (15 cal Tbsp (180 Cal total)1 Tbsp. Mustard (to taste, may add more if you like)1 tsp. White VinegarDillSaltPepperCayenne Pepper for a punch of flavor (optional)
Directions
Boil the potatoes with skin on until soft. Let them cool then dice them up into bite size pieces. Add the rest of your ingredients. Let it chill for at least an hour, up to 12 hours.
