White Chicken Chili - 5 qt. Crock Pot

Ingredients
3 3/4 Cups of Water1 to 1.5 lbs boneless skinless chicken breast cut in chuncks2 cubes chicken bouillon1.5 tsp. lemon pepper1/4 tsp. oregano1/8 tsp ground cumin (optional)1.5 tsp minced garlic (fresh)1.5 cups chopped onion1 Tbl. margarine2 (11 oz) cans white shoepeg corn, undrained2 (4.5 oz) cans chopped green chilies undrained3 (15.5 oz) cans white northern beans undrained1 to 1.5 Tbl. lime or lemon juice
Directions
Place chicken and water in pan; bring water to a boil and cook chicken chunks on medium/high for 30 min.

Meanwhile, saute onion and garlic in butter. Placed cooked chicken an remaining water, onion/garlic, corn, chilies and beans in crock-pot. Cook on low settings 8-10 hours or on high settings 4-5 hours. Add lemon juice 1 hour before serving.

Serve with shredded cheese (cheddar or Monteray jack) crumbled white corn tortilla chips and/or a dollop of sour cream. NOTE: chips and sour cream not part of the nutrition calculations.
