Roasted Lemon Tarragon Chicken

Ingredients
6 small chicken breasts (no skin)2 lemons, quartered lengthwise4 stalks fresh tarragon (or 1 tbsp dried)1 small glass dry white wine6 cloves garlic, whole1/2c chicken stock6 red potatoes, quartered lengthwise
Directions
Put all ingredients in a large baking dish. Bake in a 350 F oven for about an hour - you might need longer depending on the size of the chicken.


Variations
* Use a whole chicken instead of breasts.
* Use limes and cilantro for an Asian feel
* Add chilli
* Use rosemary
