Saucy White Bean Chipotle Chili

Ground beef, extra lean, 500 grams (remove)4 Garlic cloves, minced1 tbsp Chili powder1 tbsp dried oregano3 Chipotle Peppers in Adobo Sauce, minced1 medium green pepper, chopped 1/2 Zucchini, chopped1 medium red bell pepper, chopped1 large onion, chopped1 19oz tin of white kidney beans, rinsed and drained1 28oz tin of crushed tomatoes
Cook beef, garlic, chili powder and oregano in a large pot or dutch oven over medium-high heat until the meat is no longer pink. (5-7 minutes)
Add in the vegetables and chipotles, stirring to coat everything in the seasoning.
Gently mix in the beans, careful not to crush them. When mixed in, add tomatoes and stir. Cook uncovered until the mixture starts to bubble and boil.
Reduce heat to medium-low and simmer for 30-45 minutes to enhance flavours.
Serve with lo-fat plain yogurt or sour cream.
