Banana Banana Muffins

2 cups whole wheat flour1 tsp. baking soda1/4 tsp. salt1/4 cup butter (softened)1/4 cup unsweetened apple sauce3/4 cup brown sugar2 eggs, beaten2 1/3 cups mashed overripe bananas (about 5-6 med. sized bananas... the more brown the better the banana flavour)
1. Preheat oven to 350 degrees F (175 degrees C). Use paper liners to make taking them out really easy and fast.
2. In your mixer cream butter, eggs and honey until light and fluffy. Add bananas and sucanat and mix well. Finally add your dry ingredients and stir until just moistened... DO NOT OVER MIX at this stage or the muffins will be tough.
3. Bake in preheated oven at 350 for about 20 mins.. do not over cook. Use a toothpick to make sure they are done. Turn them out onto a wire rack to cool. These freeze really well!
