Peanut butter cookies

2 cups peanut butter (I prefer chunky)1 cup splenda baking mix (half sugar, half splenda)2 large eggs1 t vanilla1 T pumpkin pie spice
Mix splenda, eggs and vanilla together in a stand mixer or food processor until smooth.
Add peanut butter and pumpkin pie spice and blend until a firm, consistent dough if formed.
Chill for 15-20 minutes. In the mean time, preheat your oven to 350 degrees.
Form cookies into small balls. It helps to spray your hands with some cooking spray.
When cookies are formed, press them out with a fork in a criss cross pattern.
Bake for 10-12 minutes.
Cool and serve with milk!
