Cauliflower Crust Paleo Pizza

Ingredients
2 C. Steamed Cauliflower2 Eggs1/2 C. Almond meal or grind up enough almonds to get 1/2C.1 Tbsp. Cocunt Oil Toppings:8 ounces Tomato Paste2 Tbsp. Italian Season (didn't have Italian listed)1 C. Zucchini1 C. Broccoli4 Mushrooms4 links sliced: Trader Joes's Pesto Sausage
Directions
Preheat oven to 450 degrees, steam cauliflower and once soft, mash till it resembles rice grains with a food processor or use fork to mash.
Mix all the other crust ingredients together.
Spray pan down with cooking spray or oil
place crust on pan and form into pizza shape
bake for 12-14 mins. until edges start to turn brown
(its okay if it's a little soft and mushy, that will go away once you top and back for additional time)
Mix the Italian seasonings and tomato paste together and spread evenly over crust
top with the ingredients listed or with your own and cook an additioinal 5-10 mins.

    This was delicious! My husband and I both loved it! We did make our own homemade tomato sauce and we put zucchini on top.

    Updated...This is so good! We just made it again last night. Even our boys liked it. It's a keeper. We also sprinkled a salt free garlic and herb seasoning on top too. - 8/11/14

    This didn't work out for me. I sprayed the pan down pretty heavily but the crust still really stuck to the pan. That part could have been due to being at high altitude. The tomato paste and Italian Season sauce combo was pretty gross. Would recommend skipping this one. - 6/20/13
