Comfort Mac & Cheese

2 Cups Dreamfields low carb Pasta 10oz Frozen Spinach, thawed, drained2 tbls light butter1 cup skim milk1 cup Cabot 75% light Vermont Cheddar1/4 cup flour1/2 cup onions1/2 cup red bell pepper1/2 cup shredded carrots2 tbsp BBQ Sauce1/4 cup panko bread crumbsSalt & Pepper to taste
Preheat Oven to 350*
Boil pasta unti al dente, drain.--will cook more while baking.
In a sauce pan, melt butter, cook onions bell peppers, and carrots until slightly soft, add flour.
Add milk, salt & pepper, slowly begin adding cheese to make cheese sauce. Once all chese is combined, add to pasta. Add spinach and BBQ sauce, toss to combine.
Pour into baking dish, top with bread crumbs.
Bake covered for 20 minutes, 10 minutes uncovered.
4 Servings as main course, more if served as a side dish
