everyday food mushroom ragout and pasta

4 slices of bacon (cut into 1/2 inch pieces)1 small onion1 lb white mushrooms (trimmed and quartered)1 lb cremini mushrooms (trimmed and quartered)1/4 cup tomato paste1 1/2 cup water2 tsp dried thyme1/4 fresh italian parsley2 tsp red wine vinegar3/4 lb spaghetti
MAKES 6 SERVINGS
cook bacon pieces in large saucepan on med heat until crispy (use 5 quart pot/pan- make sure it has a lid for later) ; remove and set aside
add the onion to the saucepan; stir until golden (1 min)
add mushrooms; cover and cook about 20 minutes
add tomato paste, thyme, and water until combined; cover and cook until sauce thickens (8-10 minutes)
meanwhile, cook pasta to al dente. Drain.
add parsley, vinegar and bacon to the mushroom sauce.
toss pasta and sauce together and serve right away!
