Directions
12 Chicken breasts, bone and skin removed2 Cups of Flour2 Cups of Corn Flakes2 Eggs1 Cup of Oil of your choosing. Any seasoning of your choosing, I use Old Bay and Garlic personally.
Pour your oil in either a deep fryer or frying pan; cover with lid and warm up slowly.
Mix seasonings and eggs together and dip chicken breasts in them.
Mix seasonings, corn flakes and flour together in a container with a lid.
Place several pieces of chicken in the container w/flour, corn flakes and seasoning; place lid on container and shake until chicken is fully covered in mixture; remove chicken breast and shake off excess and then place chicken in frying pan.
If using deep fryer follow instructions included for how long to cook.
If using frying pan, cook for 10-15 minutes then flip over and cook for 5-10 minutes more or until you can cut meat in the center and see no pink.
Place chicken on paper towels to remove excess oil.
Serve
*Optional: I pre-prep my chicken at least 8 hours before cooking by placing in warm water with salt and letting it soak. Then I drain the water and prepare as stated above, this removes excess blood and preps the chicken for frying.
