Chicken Mexican Casserole

Ingredients
Ingredients: * Mission Flour Tortillas, Soft Taco, 8 inch, x3 * *Fit and Active Neufchatel Cheese, 4 oz * *Casa Mamita Thick & Chunky Salsa, 1 1/2 cup * *Beans Bush's black beans, 1 can * *Green Giant corn, 1/2 can * Chicken Breast, no skin, 16 ounces * *Hunt's Petite Diced (canned) Tomatoes, 1/2 can * Peppers, sweet, red, raw, sliced, .5 cup * *Lawry's Taco Seasoning, 2 tsp * *Cheese, 4 Cheese Mexican, Sargento shredded, .5 cup
Directions
Heat oven to 375

cut chicken into bite size pieces. cook on stovetop with taco seasoning. Add red pepper and cook for 2 mins. Add salsa and warm, then add neufechtal cheese and stir in. Stir in corn, beans and tomatoes.

1/3 of mix in bottom of casserole dish (8x8). Layer tortilla to cover (Just over one tortilla). another two layers of chicken and tortilla - ending with the chicken mix.

Cover and bake for 25 mins. Uncover, sprinkle mexican cheese and bake for further 5-7 minutes.

Serve and enjoy.
