Kid Friendly Tuna Melt

Ingredients
12 oz. can Light Tuna (packed in water, drained) 3 Tbsp. Yellow Onion (chopped).5 cup Dill Pickle (chopped)---I used Claussen's pickles4 Tbsp. Hellmann's Low Fat Mayonnaise2 tsp. Dijon Mustard4 slices Reduced fat Swiss cheeseI Can't Believe It's not Butter, Light spread (optional- enough to spread on toasted muffins)4 Thomas Light Multigrain English Muffin (split open)1 tsp. Paprika (or other seasonings to taste)
Directions
I used StarKist Light Tuna (in water) 12 oz. can. This recipe will serve 4-5 people (1/2 cup serving size)

1. Mix tuna, onion, mayonnaise, pickles and paprika until well combined. (Make sure you drain the tuna)

2. Lightly toast the English Muffins and spread with Light butter spread (this is totally optional but I found that it added another layer of flavor that my kids and I enjoyed) then place a spoonful of tuna onto each half of the muffin. Total mixture on both sides should be about 1/2 cup.

3. Put a half piece of swiss cheese onto each half and place in 350 oven for about 10 minutes. Cheese should be bubbly.

*You can also add tomato to each half, I didn't have any so I didn't add them or you could add spinach for some extra nutrition. Have fun and be creative! :)

    We tried this recipe, and it was great. My kid loved it, too! Only problem is that you only logged the ingredients for one serving in the recipe-- the muffin alone is 100 calories. Thanks for the idea, though! - 12/5/12
