Cheesecake Minis

Ingredients
2 cups yogurt cheese (or 1 cup of yogurt cheese and 500 g of dry-pressed, small curd .5% fat cottage cheese like Western brand)sugar (to taste)2 eggs1 tbsp vanilla12 tsp graham cracker crumbs1/2 cup dried berries
Directions
Mix yogurt cheese in food processor until smooth (especially important if using cottage cheese). Taste and add sugar to desired sweetness (or to eliminate sour flavour). Add eggs and vanilla. Transfer to bowl. Mix in dried berries.

Place 1 tsp of graham cracker crumbs into a cupcake cup. Spoon cheesecake mix over crumbs to fill cup. Bake at 325 f for 40 - 45 minutes or until tops of cakes begin to crack. Take out of oven and cool. Serve cold.
