Healthy Blueberry Muffin Cookies

1/2 cup All-Pupose Flour1/2 cup Whole-wheat Flour1/2 cup Splenda1/2 cup Brown Sugar1 tsp Baking Powder1/2 tsp Baking Soda1/2 tsp Salt2 Tbsp butter1 egg, large1/4 cup unsweetened applesauce1 tsp vanilla extract1/2 tsp ground cinnamon (apple pie spice is good too!)1 1/3 cup rolled oats1/3 cup dried blueberries
In a medium bowl, combine dry ingredients, except rolled oats. Set aside.
In mixer, cream butter, Splenda, and brown sugar. Add in egg, applesauce and vanilla extract; mix on low speed. Add in dry ingredients and mix on low.
By hand (the mixer blade will cause sticky not-set-up cookies!), mix in the rolled oats and dried blueberries.
Drop by teaspoonfuls onto a cookie sheet sprayed with cooking spray (such as Pam). Bake at 375* for 10-12 minutes or until the cookies are light golden brown. Do not over bake!
Make 24 single-cookie servings.
