Ingredients:Zucchini, 1 cup, sliced (remove)*Summer Squash, 1 cup, sliced (remove)Olive Oil, 1 tbsp (remove)*Peppers, sweet, red, fresh, .5 medium (approx 2-3/4" long, 2-1/2" (remove)Garlic, 3 clove (remove)Salt & Pepper to taste
Heat oil in large skillet on medium. Add minced garlic, sautee a minute, then add the rest of the vegetables. Sprinkle with seasonings (I added dried basil too) and toss about until tender and lightly browned on the edges.
