Carribean Chicken

Ingredients
1 lb. chicken breast, cut in pieces1 c. pineapple, drained2 tbsp soy sauce1/2 c. chicken broth1/2 c. apricot all fruit preserves2 c. whole wheat pasta, cooked
Directions
Saute chicken in small amount of olive oil. Remove chicken from pan and add broth, reduce. Mix pineapple, soy sauce, and apricot preserves to pan. Add chicken and reduce until thickened. Add pasta to pan, combine and serve.
Makes 4 servings.
