1/2 Cup Natural Peanut Butter1 Cup Salsa2 Tbsp Lime Juice (or orange juice)2 Tbsp Soy Sauce2 tsp Ginger Root, grated8 chicken thigh, skinless (boneless optional)

Throw everything in the slow cooker on low for 6 - 8 hours. Server over rice or noodles.
