Balsamic Pork Medallion Salad

Ingredients
1 pork chops all fat and bone removed2 tsp olive oil1 tbsp balsamic vinegar1 cup spinach1 roma tomato1/2 small avocadosalt and pepper to taste
Directions
Cut up pork into bite size pieces and place in a bowl with 1 tsp olive oil and 1/2 tbsp balsamic. Let sit for about 5 minutes and cook over high heat. Watch it closely as balsamic does burn. Add a bit of water at end to prevent pork from burning. Put the rest of the items in a bowl, add the pork. Mix 1 tsp olive oil and 1/2 tbsp balsamic pour over salad. Salt and pepper to taste.
