Creme Fraiche Egg Salad

Ingredients
* Hard Boiled Egg, 2 large * *creme Fraiche, 1 tbsp * Celery, raw, 1 stalk, small (5" long) * Shallots, 0.5 tbsp chopped * *Grey Poupon Dijon Mustard, 1 tsp * Salt, 1 dash * *chili 9000 seasoning from Penzey, .5 tbsp
Directions
Simple egg salad, using the ingredients I have readily available at my workplace(a cafe/bakery). The creme fraiche is actually half the calories of the "heavy duty" mayo we have! It makes a slightly more bland salad but that's where you can really punch it up with seasonings(not too much salt of course).

I just mash everything together(I use an egg slicer at work to cut up the egg). Just enough for a small breakfast snack with a roll or sliced bread of your choice.
