Breakfast Casserole from scratch

1/4 cup chopped onion2 tbsp Extra Virgin Olive Oil2 cups of chopped red potatoes with skins on1 tbsp unsalted butterGround Pepper and Ground Sea Salt to taste5 slices turkey bacon1 1/2 cups shredded cheddar cheese, 2% milk fat10 eggs1 cup milk
Pre-heat oven to 400 degrees F.
Heat a skillet on medium with the onions and olive oil in the pan.
Add the potatoes and allow to cook, stirring often to avoid sticking. Add tablespoon of butter, salt, and pepper to the potatoes and fry for 8-10 minutes. Cook turkey bacon in microwave until crispy.
When potatoes are cooked, spread on the bottom of a 9x13 baking dish. Crumble turkey bacon over the potatoes. Sprinkle cheese over the potatoes. Add more pepper if desired.
Beat together eggs and milk and pour over the potatoes and cheese. Bake at 400 for about 35 minutes or until eggs are done. Cut in twelve pieces.
