3 cups of Cauliflower, grated1 lbs of extra lean ground beef, browned1/2 cup of SalsaTaco seasoning to taste (2 tsps or so)Black Pepper to tasteCrushed garlic to taste
Process the cauliflower through a food processor using the grating attachment. Brown the meat, add taco seasoning, pepper and garlic to taste and the salsa, and then add the grated cauliflower. Cook over medium heat until the cauliflower is just becoming tender but still has some bite. Do not overcook. Serve with cheddar cheese or sour cream if desired. Try folding 1/2 cup of the mixture in a whole lettuce leaf as a wrap.
