Homemade Corned Beef Hash

2 C russet potatoes with skins1 can corned beef (just corned beef, not hash, 12 oz can)1 medium onion4 cloves garlic1 T olive oil
Makes about 8 1/2 C servings
Place the oil in a black iron skillet or non-stick and bring the. Cook over medium high heat the meat and onions together till the onions are soft. Add the potatoes and continue cooking but resist the urge to stir the mixture! Let it cook till it begins to get brown, then you can stir or turn the mixture to get more parts brown. Add the garlic about any time during this procedure, this avoids scorching it. Continue browning to desired color.
We usually serve this with poached eggs but the calorie count is only for the hash.
