Jalapeno Poppers (baked)

Ingredients
12 Jalapenos8 tbsp. Light cream cheese1 cup cheddar cheesePanko bread crumbs
Directions
Slice jalapenos in half, and wearing gloves carefully scoop out seeds and membrane. Place on a rack over a baking sheet lined with foil. Set aside.

In a bowl, mash cream cheese with grated cheddar. Mash the cheese mix into the hollowed peppers - overfill. Dip each popper face down into panko crumbs.

Bake in a 400 oven for 20 to 25 minutes. Watch for the last 5 minutes to make sure they don’t get overly brown.

Makes 24 appetizers.

    I very seldom give 5 stars to any recipe but this was GREAT! I did have to adjust the seasoning to my liking. I added garlic, white pepper and crushed red pepper flakes to the cream cheese. They took about 5-7 minutes longer to cook than stated but well worth the wait! Will def make again and again! - 9/23/20
