Stacey's Elk Lasagne

Ingredients
Ground Elk MeatShallotsGarlicSalt PepperOlive OilBlack PepperSea Salt Mrs. Dash Original BlendItalian seasoningPasta SauceCottage CheeseEggMilkMarble Cheese, shreddedOven ready lasagne noodlesFresh mushrooms
Directions
Saute shallots and garlic in olive oil until soft; add mushrooms, continue to saute until soft; add elk meat.
Brown elk meat and add spices until fully cooked through.
Spray casserole with cooking spray, use small amount of sauce to cover bottom and add noodles. Add layer of cottage cheese mixture, layer of meat sauce and top with 1/2 shredded cheese. Noodle layer, cottage cheese, meat and noodles. Top with remaining meat sauce and shredded cheese. Cover with foil and bake at 375 degrees for 45 min. Remove foil and cook 5-10 more minutes until cheese is melted and bubbly. Cut into 12 squares, one square equals one serving.
