Blueberry Oatmeal Pancake

Ingredients
3 tbsp rolled oats (optional: soaked overnight)2 tbsp almond flour1 eggdash of salt2 tsp erythritol dash of stevia1/8 tsp baking powder 1/8 tsp baking soda1 tsp coconut oilhandful of blueberries1/3 medium banana chopped in little pieces2 tsp maple syrup
Directions
Blend rolled oats, almond flour, egg, salt, erythritol, stevia, and baking powder/soda.
Stir in blueberries and small chunks of banana
Melt coconut oil in large pan at low heat
Drop four round puddles onto pan
Cook for 3-4 minutes covered
Flip and cook for 1-2 minutes
Serve with maple syrup
