Pork red curry

Ingredients
1 pork tenderloin1 large sweet red pepper1 can coconut milk1 can waterchestnuts1 can red curry cooking sauce2 cups uncooked instant white long grain riceolive oil
Directions
in wok heat olive oil and add sliced pork tenderloin and rest of ingredients except rice. Bring to boil then simmer 15mins or until pork is tender, stirring often.
Cook rice according to instructions. Use instant brown rice if you want for more fibre.
Use ladle to serve over cooked rice and enjoy
