Chocolate Tofu Mousse

Ingredients
400 g soft tofu80 g bittersweet chocolate, chopped2 tbsp unsweetened cocoa powder50 g maple syrup1 tsp vanilla
Directions
Add tofu to a blender and blend for 1 minute until smooth. Melt chocolate over double boiler. Turn off heat, add cocoa powder and stir until smooth and combined. Add chocolate, maple syrup, and vanilla to blender and blend until combined. Pour into cups or ramekins and chill for at least 2 hours.

    I haven't tried this receipe yet but will. I just want to say I've cooked with tofu a lot. For a creamier pudding use soft silken tofu (it's stored on the shelf, not in the dairy section). I use it to make cream cicles. The soft silken tofu is creamy, doesn't separate and is wonderful for desserts. - 2/23/12

    Good question! I don't consume much soy either these days. I'd go with either a couple of avocados or folding the chocolate into mascarpone cheese, depending on your dietary needs and preferences. You could also try it with a neutral, full fat greek yogurt, or bananas, but I have not yet.

    I absolutely love this recipe. I don't add the maple syrup - but I do everything else and this recipe is fabulous. It helps me with my chocolate cravings without the guilt. My husband even eats it and he's not a tofu lover - but loves this dessert. - 6/30/11

    It's possible that you overheated the chocolate, or got water into the chocolate as it was melting, which will cause it to seize up and become an oily, grainy mess.

    This tasted rich and a couple spoonfuls was very satisfying w/ a great dark chocolate flavor. I added mint extract. Without the mint there was a tofu after taste I didn't care for (and I like tofu). My husband who doesn't like tofu liked it plain without the mint. - 8/25/09

    the bittersweet chocolate is to overpowering and strong, my daughter thought it was gross. Think i'll go with a semi-sweet chocolate next time or maybe use 40g chocolate. thinking of just going with my favortie chocolate next time - 7/14/13
