1 cup cooked spaghetti squash1 cup mushrooms1/2 cup onions1 cup of pasta sauce (the one I used for this recipe was 160 cal for 1 cup)
Cut spaghetti squash in half and scoop out seeds and stringy pulp. Put one half on a microwave safe plate that has 1/4 cup of water and microwave approx 8 minutes or untill you can use a fork to pull the strands of squash free of the hull. While squash is cooking cut up mushrooms and onions and saute in pan sprayed with cooking spray. Add small amount of water to pan if needed. Open Jar of your favorite pasta sauce and warm in sauce pan. Add mushrooms and onions to sauce when they are cooked to your liking. Put the spagehtti squash on a plate when it is done, throw the sauce with the onions and mushrooms on top of the squash and viola you are done!
This makes a very healthy one person serving of about 3 cups when all is said and done

Mom's always seem to know! Thanks for the feedback. I like this recipe because it is so fast to fix and it takes care of the longing for a big plate of pasta, plus the ingredients keep well in the pantry.
