Eggplant Pesto Delight

Ingredients
2 Eggplant2/3 c Parmesan Cheese grated2/3 c Bread Crumbs1/2 tbsp Italian Seasoning2 tbsp Onion chopped1 c Basil Pesto
Directions
Preheat Oven to 450*. Line two cookie sheets with foil and spray with cooking spray.

Slice Eggplant lengthwise for a total of 12 slices.

In a bowl combine Pesto sauce and Onion. In another bowl combine Parmesan, Bread Crumbs and Italian Seasoning.

Dip Eggplant slices in Pesto/Onion mixture, then the Dry ingredient mixture.

Place slices on cookie sheet and bake for 30 minutes turning once.
