2 medium sized Raw Potatoes (peeled)1 can (14.75 oz) Pink Wild Salmon 3 tsp fresh Parsley or 1 tsp dried1 large egg1-1/2 tbsp Light Mayonnaise1/4 cup Progresso Italian Bread Crumbs
Grate potatoes and place in a bowl. Drain Salmon and remove skin and any bones and place in bowl with potatoes. Combine Parsley, egg, and mayonnaise into bowl with potatoes and Salmon. Mix together well. Add approximately 1/4 cup of bread crumbs or enough to form patties.
Place approximately 3 tbsp olive oil, or oil of your choice, in a frying pan and heat on medium to medium high. Cook patties for approximately 5 minutes on each side or until browned.
