Directions
Whisk dressing ingredients in a bowl. Cover and refrigerate. Mix salad ingredients except noodles
in a bowl; toss with dressing. Boil dried rice noddles until al dente, about 4 minutes;
drain. Arrange salad on 6 plates. Place cooked noodles around salad.

Dressing1/3 c rice wine vinegar3/4 c thick teriyaki sauce2 tbs toasted sesame oil2 tbs fresh lemon juice2 tbs toasted sesame seeds1 tbs honey or sugar2 cloves garlic finely choppedSalad1 small head savoy or chinese cabbage, finely chopped2 celery stalks sliced4 scallions, finely sliced2 carrots, peeled and julienned1/2 c whole unsalted cashews1 (8oz) can sliced water chestnuts drained1 1/2 c fresh cliantro leaves4 oz dried rice noodles3/4 dried crispy rice noodles
