Eggplant Pasta Sauce

Ingredients
3 TBS Olive Oil2 cloves garlic chopped1 lb. ground turkey1 TBS Basil2 TBS parleyOne whole eggplant, unpeeled and diced2 cans crushed tomatoes
Directions
Put olive oil in large pot
add garlic cloves and cook until garlic is slightly browned
add ground turkey and brown
add basil and parsly
then add diced eggplant and cook until eggplant has cooked down
Add crushed tomatoes and bring to boil
Reduce heat to very low and simmer for 2 hours
serve over whole wheat pasta
