Black Bean Dip

Ingredients
– Black Beans, 3 cup (cooked per directions, cooled)– Tomato Paste, .5 can– Garlic, 4 cloves– Lime Juice, 2 lime yields– Water, 3 Tbsp– Cumin (ground), 1 tsp– Pepper, red or cayenne, .25 tsp – onion, fresh finely chopped, 0.25 cup (green or white)– 1 Chipotle Pepper in 1 Tbsp Adobo Sauce (or to taste)
Directions
Put everything in a food processor and mix until combined and smooth. Serve cold. Can garnish with sliced green onion and serve with low-fat sour cream if desired. Great for dipping fresh veggies (broccoli, celery, carrots, cauliflower, etc.) or your favorite pita or tortilla chips.

Also good to use in black bean quesadillas!
