Beet and Cabbage Soup

Ingredients
900 ml Beef Stock Reduced Sodium (1 Tetra Pack)2 Cups Fresh Beets, Peeled and Diced1/2 cup chopped Onion1 Tbsp Olive Oil3 plum tomatoes, skinless, chopped1 stalk Celery1 Cup finely chopped cabbageBlack Pepper to tasteDill weed
Directions
Place tomatoes in boiling water for 30 seconds. Let cool and remove the skin. Dice.

Saute onion in olive oil until soft
Add the rest of the ingredients and simmer 50-60 minutes until beets are cooked

Makes 8-10 one cup servings

Can be served with sour cream if desired.
