Pecorino Mashed Potatoes

Ingredients
1 lb Russet Potatoes, peeled and quartered2/3 cup half-and-half2 Tbsp unsalted butter1/2 cup grated pecorino romano cheeseSalt and Pepper to taste
Directions
Cook the peeled and quartered russet potatoes in a pot of simmering water until tender, about 30 minutes. Drain and place in bowl. Heat half-and-half and butter in the already hot pot. Once butter is melted, add to potatoes and mash. Stir in pecorino cheese, salt, and pepper. Cover and let stand for 5 minutes. Makes 3 large or 4 medium servings.
