Lentil Spinach Dahl

1/4 onion, finely chopped1 tsp canola oil3/8 tsp Indian spice mix (Dal masala if you have it)1 cup steamed lentils1 cup chicken broth (or dissolved bouillon)2 cups spinach, chopped
Saute the chopped onions in canola oil in a soup pot. Add in the spice mix and stir until onions are evenly coated. Add in once cup of the steamed lentils and stir to coat as well. Add in one cup of broth and let simmer on low heat for about 10 minutes.
Add chopped spinach and cook until it wilts, about 1-2 minutes. Dilute the soup with hot water until desired consistency and flavor.
