Directions
Cook potato until soft then mash. Add egg and mix. Scoop out onto floured board and add enough flour to turn the potato into a dough. Roll out into long skinny pieces and cut.. Freeze pasta. Cook in boiling water until the pieces float to the top and are soft. Approximately 2 min. Serve with spaghetti sause.

    My recipe calls for 1.5 pounds of potatoes; 1.5 cups flour, and 2 eggs (but eggs are optional). Boil potatoes with skins approx 25 min., peel skins while still hot, mash. I found that you really don't need the eggs. - 5/17/09
